Does anyone know the pin outs (pin to pin configuration)
for the sony ps2 audio/video cable.

Just google.... plenty of sites...
http://pinouts.ru/Game/PlayStationAV_pinout.shtml is one that happens to be in my bookmarks.
I guess by 5pin din you mean s-video, again pinout is easy to find:

does anyone know the pinouts for the playstation 2 a/v connector?

those links were for playstation 1...

All my ps1 av cables work just fine in my ps2, so I'd hazard a guess that the pinouts are the same.
