Is it possible to rollback a kxploit modified EBOOT.PBP to its 1.0 status so it runs on a 1.0 machine?

Take the actual eboot.pbp (not the exploit one), and package it into a pbp using whatever tool you want.

seipsptool does this for you.

All the kxploit-method entails is extract from the original v1.00 EBOOT.PBP:
PARAM.SFO, ICON0.PNG and DATA.PSP

Then repack PARAM.SFO and ICON0.PNG into the %-EBOOT.PBP
and rename the DATA.PSP to EBOOT.PBP

so in order to roll it back:
- rename the 2nd EBOOT.PBP back to DATA.PSP
- extract the PARAM.SFO and ICON0.PNG from %-EBOOT.PBP
- repackage these three files into an EBOOT.PBP

This is assuming you're using PBP Unpacker v0.94
